I thought I saw a template for a Organizational Chart in the trail version. I cannot seem to find it again in the full version. Is there a template for the chart?

I think you may be refering to the graph tool, it will create pie and bar graphs with preset data. There are a lot of extra files included with .ai that have various useful presets. Look for a folder called goodies in your application dir. BEHOLD! As Steve Jobs introduces us the latest in desk-lamp technology!
