SPS2003 is a fairly new technology, cmajewski. Those who are running SPS2001 are reluctant to upgrade in a lot of cases, due to the loss of version control and publishing.
We're starting with a fresh portal system, so we don't have any of the upgrade issues. But we're definitely not going outside the LAN. Are you (must be) springing for the Internet Connector? We're talking deep pockets if you are. You probably won't find too many folks on this forum in the same rarified air.
That aside, I'd opt for the basic security measures that you would apply to any out-facing Web site. If there's anything above and beyond to do for SPS2003 specifically, I'd try the newsgroup, and Google for James Edelin (sp? try "Edelen" also) or Bill English. Finally, check the source: go to MSDN and check for any white papers etc.

most secure is using SSL certs on your server:
on your firewall forward ports 80 (and have it redirected to 443) and 443 SSL to your internal server
set your website (virtual server) to do basic authentication.
if your system is well patched this is a secure way to go
