Old RJ45 Jack with Screws and 8 diff colored wires HELP!

Howdy all, I'm in need of moving our SAT terminal for our Avaya PBX from my office into our Data Center. Due to the age of our systems many components, such as wall Jacks for voice and data, are not the same throughout our facility. I'm trying to match up the pinouts so I know which wire goes where by the time I move the SAT; so it will work in other words.

I removed the cover from the wall jacks that are in my office and low-and-behold it is ancient and was installed by the Romans during the reign of Nero!!! LITERALLY... All eight wires are colored differently, are screwed into place as opposed to being "punched" into place with an impact tool and are not numbered so I don't know which pin goes where.

The two cables that are plugged into the SAT are colored as follows, from the bottom of the RJ45 connector -that is the opposite side of the clip of the connector-:

1 Slate/Gray
2 Brown
3 Yellow
4 Green
5 Red
6 Black
7 Orange
8 Blue

All joking aside I have looked up-and-down-the-block, on google that is, and cannot figure out which pin goes where.

When you look at the back side of the Wall Jack it is cicular in configuration with screws securing the wires from the run into place. These wires are also colored! Do these wires match exactly to the cables that run between the SAT and the Jack?

Can someone help me figure out which color wire goes where so I can make the proper translation for when move the SAT?
