Can anyone tell me why the NT kernel is said to be more complex and bigger than the UNIX kernel?

because unix kernel is smart and intelligent as compared to windoze. :)
just kidding

Windows has a lot of code devoted to user experience, also I have heard it said that the policy for Windows OS is 'Include everything' meaning that Windows has support and wizards for virtually every protocol commonly used.

*nix is modular, so the kernel can be configured to run from a floppy disk. With NT, all the code is loaded like it or not.

You could in fact have a *nix kernel compiled with enough modules to make it larger than NT, but it would still probably run better, IMHO.

I work on both (I'm much more adept with W2K) and it seems that while *nix is very powerful, you need to learn a lot before you can even begin to harness the power.

While windows is very easy to use, it is no competition with Linux in terms of http and smb performance (web server and file sharing) and probably lots lots more I havn't tried yet.
