Novice user with question about priveliges

I believe there are two (if not more) levels of permission to run apache under. I think one is equivalent to anonymous or a very restricted user. I think the other is equivalent to root, running under sudo possibily? Can you tell me hat benefits are there to running under root, what benefits there are to running under anonymous and why you would choose one or the other. I trying to learn more about apache to decide if it would be good for my gaming site.
 
Apache starts as root because it needs access to system level stuff but for security it runs as a regular user. On most systems it runs as user apache and group apache. Apache is the web server of choice. It it used more than ALL the others put together.
