Noob questions working with Linux and RAID

I was thinking about installing Linux so I could have a software expandable RAID 5 array. I currently use win2k3 server, and its software RAID 5, but would like to be able to expand it on the fly. I have read that expanding an array under Linux can be unstable. Anyone have any experience or suggestions on this?
