I have an ISS server that has (3)sites that are running on it. Default Website / abc.com / 123.com and I recently added xyz.com to the equation.

When you hit xyz.com you are presented with a login dialog box and I am not sure why. The site properties are all default except for host headers .. those match the FQDN xys.com and
I did not have this problem with the other sites so I am not sure what is going on....

Any suggestions would be a huge help.

In addition to mwolf00 suggestion, be sure to include your IUSR_machinename in the NTFS permissions in your site.

Hope this helps. Please let know if this resolve your issue
