Newbie to VPN Networks

Hello, I am banging my head on a problem that i am having. This is my first time administering a VPN connection, and i am learning as i go. I need to figure out how to get certain traffic to cross over one site to another from an outside VPN Client.

I have a site to site connection from my office to a co-location, This connection is working fine, While at Site1 all traffic flows to Site2 and vice versa. Site1 is using a Sonicwall PRO 1260 Enhanced and Site2 has a Sonicwall PRO 230 Standard. Both sites allow a client to connect to the site. Which is fine for me and the other IT Staff. But we would like for our end users to be able to connect to Site1 from home and be able to reach certain services from Site2. (i.e Exchange email). Even if we could allow all traffic to flow from Site1 to Site2 while connected with the VPN Client would be fine, but allowing certain traffic to flow would be ideal!

I am very new to VPN setups and I'm not familiar with the terms i should be searching for, I am not sure if this is a firewall setting or under the VPN connection setting.
