newbie question, Can I set up a template to extract data

We have Version 7 Pro.
We get hundreds of pdf files throughout the year on going basis. they are from a another company. they are consistently the same but the data is not in regular tabular form. Is there a way to set up a mask or something to extract this to another text file or Excel?
