Newbie :How to create a new extension for new employee?

I am totally new to the norstar phone system. Forgive me if my question sounds silly. My system version: SP:30JBM03 NAT. How to create a new extension for a new employee and assign it to a phone set? If the wall phone jack doesn't have a tone, and it's not labeled, do I need a tone tester to find out which pair of cable to punch? The 1 phone jack has 4 pairs of cable all punched in, which pair is actually used? WHite blue and blue?

White blue/ blue white is used

Once jack is activated plug the set in and do F*0 Intercom to see wht the ext is.

Do I need a tone tester to find out which cable corrsponding to the jack if there is no label on the jack?
