New VPN user needs help

I've established a VPN connection (and logged on) with my server at work, but now how do I access my e-mail account and other files?

if you have correct dns and wins settings, you will do the same as LAN clients.

As for email, it depends on how you access email at work. Do you use an Exchange server? Do you get it via POP3?

As for other files, you should be able to map network drives from work to your local machine, and access files from Explorer.
