I have access to all the required software to set to my own SharePoint development environment, but I don't know where to start. I need to learn the software ( sharepoint ) from a user's perspective and learn how to do some custom development within it as well. Does Microsoft or another company or site have any materials, tutorials or pre configured ISO images to get one up to speed?

Any suggestions are welcome since you're all the experts!

Thanks,

Scott

There are man sites that offer information on setting up a SharePoint environment. You can just google. Microsoft has many worksheets available for planning your deployment.
In my opinion, if you are going to be developing on SharePoint, it is best to just go ahead and install it and start working with it. That way, you can get a feel for how the install works and what is involved in setting up a SharePoint environment.
This will also help you to get a feel the end user experience related to SharePoint.
