New to Office IP - Trying to forward call when busy/no answer

Hello,

Currently, calls to our director are forwarded to her assistant but if she is on break the call gets lost. How can I configure forwarding so if her assistant doesn't pick up the phone the call goes directly to the director?
 
Make a hunt group that rings the assistant, then an overflow group after 6 rings or so the call routes to the director.

Another alternative would be a HG Out of Service destination to this group, an the assistant pushes it when she leaves for lunch or for the day, so calls route to a special destination like a voicemail box or to the director's phone.

Someone can probably explain it more eloquently and simply, but this is vague enough for you to get thinking about where and how.
