Flash MX is the latest version, so why not start there?
As for books, if you are going to get heavily into the Flash coding I would recommend "Actionscript: The Definitive Guide" by Colin Moock.
I'm not sure what books are good for starting from the very beginning... there are a lot of Flash books out there now.
