New Server Purchase w/MS Server 2008

I am finally getting to upgrade our server (Netware 5.1, 600mhzQ). Based on software upgrade requirements, MS Server 2008 R2 is recommended. If you would kindly share what MUSTS you think I should have for the new server, I would appreciate it. Also, I am looking at backups OTHER than a tape drive - perhaps the removable hard drives. Any wisdom concerning this would be appreciated.
 
I'm assuming your question is focused on hardware? All drive volumes need to be RAID. Hardware RAID, not software RAID. Dual powersupplies, dual NICs. iLO/DRAC card.

Yes..hardware. We have Raid 1 now. Due to budget, I was thinking of hardware capable of upgrading to Raid 5, but with Raid 1, two drives for now. I was looking for minimum specs with ability to add to as needed.

You can't change RAID levels without rebuilding the arrays. The OS and paging file should be on a different array on different spindles from data volumes.
