New Menu on Micros 3700 2

Hello to all and thanks in advance for your help.
I have been asked to input a new menu for our hotel restaurant.
Although new to this system, I have figured out how to do this.
However, our menu data base is cluttered with lots of old information that
I would like to delete. And I want the kitchen terminals to print in Spanish as well.
When I try to access "menu classes" to allow this, it shows I don't have authority.
Problem is, recent management company change has resulted in no one with access level to upgrade my access level.
I even think the previous management didn't have this access, as they were to cheap to pay for advanced Micros training.
Is there a way to delete and change at my current "manager" access ?
I am too anal(itic), and want all the old data erased to make for a better "menu items definitions" report.
 
Please understand that you are asking for the combination to the safe; so don't be surprised if this is your only response but tell the new owners not to be CHEAP as well and pay to have Micros come visit and get your system set up properly. This assumes of course that your intentions are noble and the new owners are NOT comfortable with not knowing just exactly how their POS system works when it comes to access from employees (assuming you are an employee).
 
I understand there may be security concerns with the access I am seeking. I only wish to simplify the menu data base and set up a second language on the kitchen printers. As I mentioned above, I am able to enter the new menu and prices. What I am currently doing is replacing the old item name with "+++" to denote what I want to delete, and directing it to the "not in file" printer. There have been at least four previous menues entered haphazardly into the data base, so the "Menu Items Definitions" printout is in total disarray - salads, entrees, sandwiches, etc. are not listed together. I have been told we will get a new system sometime after April, and I want an organized data base ready to transfer to this new system. I am doing what I can by re-entering the new items over the old items, and organizing the courses the same way, but I am still left with a lot of useless "+++" to be deleted. And still no way to add "Name 2" to the kitchen printers.
 
Here's a little bit of a workaround that may help until you can get Micros to provide you with access.

The menu item numbers can be changed in the POS Configurator.
When you finish changing a bunch of item names to ++++, Change the "Sort By" selection at the top to "name". This will put all the ++++ items together.
Now just change the number to something very high. I usually add 1,000,000 to the current number. So item # 1,000 becomes item # 1,001,000.

This will put all of your dead items at the bottom of the list, and you can run your menu item report on items 1 - 999,999

I never thought of changing the item numbers !!!
This works great for how I want to organize the menu item report for the Chef.
I will just have Micros block delete everything after #1M before they transfer the menu data base to the new system.
