New Exchange server-Change Outlook E-mail name

We have just installed a new Exchange server, thanks to our new owners, and the server's name is quite different than our original exzchange server. We have approx. 500 users. Any ideas on how to change the field for the exchange server's name in outlook without going to each PC? Perhaps a registry change or VBS script?

Did you have to move the mailboxes to the new server? If so the name will change when you move them automatically. No need to go into Outlook to change it.
 
The mailboxes are being moved to an entirely new Exchange server with a different Org, Site and server name. I know that outlook makes changes in the registry when a profile is created on the PC. According to our new owners the only way to change this is by going to every PC and deleteing the profile, then re-create the profile with the correct server.

In this situation How would outlook know where to go to connect to the mailbox without re-creating the profile somehow?
