Network shares, recycle bins and missing documents

Hello,
I run a 2003 server using group policy to share out folders inwhich users place their documents. When a user, on their client machine, deletes some of their files or documents, rather than the files going to their local recycle bin, because they are on the server (shared network folder) the files are simply deleted.

Does anyone know of a way of maybe redirecting (via group policy) so If any network files are deleted, they are removed to a special folder on the server appropriately named to something like 'Deleted Items'???
 
Look at implementing shadow copy on the server hosting the shared folders;
