Without any information, the only thing I can say is, try looking at your Virus program. What time does it start/stop/update. Do any of these times coincide with the network freezing up? Does a server on your network, that say, serves DNS or DHCP, go into a sleep mode everyday at the same time? Do you have a local printer connected to a server on your network that causes the server to reboot?
There are also non-network related problems such as electrical interference from say a device in the building that kicks off everyday. You might try to narrow down the problem on a small network like this one by changing the time on the server and desktops up an hour and seeing if the problem still occurs at the same time.
