I recently created a number of documents using Serif Page Plus X3. These all
contained images in various formats .tif, .gif, .psd, .png all in greyscalee. When
I convert the document to pdf format, using either the program's
"publish as pdf" function or using the "print as pdf" option, many of these
images appear as negatives. I am using Acrobat 8 pro.
Can anyone suggest why or a solution?

I don't know a cause, but a fix would be to export them from Acrobat 8 as TIFF's, bring them up in a photo editor, reverse them to positive images, and replace the original in Acrobat.
I have to do something like this now and then in an archive that was converted from microfilm jackets - not to convert negatives, but to flip images where the film was put into the jacket wrong-side up, giving a mirror image, which can't be corrected in Acrobat.

I seem to have sorted the problem - found some refs online about similar problems printing hard copy from Acrobat. I changed the monochrome compression in Serif PP from CCITT to ZIP - problem sorted!
