CTO has asked that we host another company's (they rent office space from us) email on our Exchange 5.5 Server. Can anyone offer advice on how to do this?

you need to register the other company's domain name and then point the MX record at your exchange server. Then add the additional domain onto your IMS as either "inbound" or "relay" , depending on how you want this other office to retrieve their mail, and what kind of connectivity they have to your internal network. For example, if you're actually going to allow them direct access to your server, just make the domain "inbound" and give the other company accounts on your server....

add the additional domain to your recipient policy, after that it depends on how the other users will be accessing...
