Need to backup 120GB Exchange journaling database

I need help with a solid solution to backup a 120GB exchange database to optical media. The backup will need to restore the database from the media. I am thinking of using BlueRay but what backup software could span this large database across multiple disks while maintaining the integrity of the database? Thanks for your thoughts.
