need help, win2k sloooows down 10+ minutes after boot!

Hi all,
I'm having a rather dire problem with win2k server professional. What happens is after you reboot the server and log in at the server console, everything works fine for about 10 minutes, but after that the mouse starts getting all jerky and you can't click on anything. Everything becomes un-responsive. You can't even use the 'windows' key on the keyboard to open the start menu. If nobody is logged in at the console, you have close to an hour or so before it happens. It seems like the more activity, the sooner the problem happens.
I looked at the system logs, and couldn't see any errors that haven't always been there, so I'm at a loss. The nature of the problem makes me think there's a mad service that's gobbling up resources and not releasing them correctly. But I really have no idea. I'm a win2k newbie, so any help would be appreciated.
