Need Help to Rebuild Aloha Database

We have Aloha, and looking to find out how to copy the menu on other computer and rebuild the menu because over the years we put food items on liquor items categories, etc. So I want to rebuild all beverages, food, modifiers, and misc items with item number and then upload it on my aloha server. And we are gonna change the menu in a few months so I need to get this started asap
 
The best way to do this is to use 2 newdata folders. One that is active and the other that is staging. Make sure you have disable autoupdates.

Steps to do this

Close Aloha Manager
find your newdata folder in the Aloha folder
copy it and rename to newdatanew

When you want to work with it, close Aloha manager
Rename Newdata to Newdata1 and rename newdatanew to newdata
Open aloha Manager
Now make all your changes. When done close Aloha Manager and rename the folders back. newdata1 becomes newdata and newdata becomes newdatanew.

Unless you have 2 Aloha keys and the Aloha installation media, it is not easy to make changes anyother way.
