I see that 11-09-02 appears to be a programming location to put in a code to access trunks individually.
For the sake of argument, if I made this '8', would 81 be for trunk 1 and 82 be for trunk 2?
 
No, if you wanted to use 8 to get a different trunk group then you can do the following:
11-01- 8=1
11-09-02 = 8
14-05 put some trunks in route 2
Dial 8, 21-15 put extensions into route table 2
The default individual trunk access code is #9. Dial #9+001,002,003 etc for individual trunks. #9 is found in 11-12-15.
