Are all Electra Elite sets single pair sets? Do I need only wire a single pair of wires to make the set work?

Yes, they are all single pair. If you have any of the older ETW models, they use pins 3&6 or the Yellow/Black pair. Any DTU or DTH model use the standard 4&5 or Red/Green pair.
