my.ini --> how do i set the --default-character-set ?

Hello everyone. I would please like to ask how i can automatically start the mysql service on Windows 2000 Server with
--default-character-set=greek.

(*)When i go to Start-->Programs-->Administrative Tools-->Services, i stop the service and re-start it with the
--default-character-set=greek parameter, it works PERFECTLY! BUT, when my server restarts, it starts the mysql service with the latin1 character.

Please advice me: what entry should i make in the [mysqld] section of my.ini, so that mysql starts always with --default-character-set=greek ?
