I have deleted the My Documents icon on the Desktop and now I want it back. How do I do this?

Please note: I don't want it as a shortcut. I want to be sure I change the target location of the My Documents folder to a location on the server. Recreating the icon as a shortcut does not change the location that Microsoft Office and the rest will want to store documents by default. Thanks.

Open my Computer then select the following on the tool bar: Tools, folder options, view, scroll to the bottom and select Show my documents on the desktop.
