multiple instances of apache

here's my situation:

on a machine, I've installed apache, and everything works great. I have set up the main server on port 80 and some virtualhosts on other ports. The only trouble is, I need root access to stop/start/restart the server because of port 80. I've got root access at the moment, but not for long.
Is there any way to have two separate apache instances (ie. separate logfiles + config files aka. Netscape) so that I can start the main port 80 server and then leave it, then have the others started as the non-root user?

You can start anything as a non-root user if you use a port above 1024. And a note to pspierce: if apache is listening at port 80, it starts as root and then switches to "nobody". Do a ps -aux and you will see one instance of apache running as root and the rest as nobody. Anything that listens on a port less than 1024 has to be started as root. It's a security measure.
