Go to the "Edit" menu and select "Preferences:General", or type "Ctrl+K". In the new window that opens you will see a column of options on the left. Click on "General". You should now see a column of checkboxes under the heading "Miscellaneous". Make sure there is a checkmark in the last checkbox "Show documents in taskbar". Click on "OK" and quit Acrobat. Now every Acrobat document will open with its own task bar button.
Personally I don't like this behavior, as it can make the taskbar get very crowded. If you're just looking for a quick way to switch between open documents try using "Ctrl+Tab" instead.

Thanks for the other replies.
I should have been clearer with my question - the solution is for multiple monitors. One alert reader gave me the Start, Run command: Acrobat /n, which accomplishes opening separate documents in separate windows.
