1.How do I create field to easily replace identical/changeable text throughout a large document?
Example: Technical manual with product name that changes in different contexts, used many times, need to be able to easily change without using search/replace function.
2. How do I insert fields in place of actual text throughout document, so intermediate user can replace text that fields reference to, to make consistent changes throughout document?
 
Well it is hard to give specific help without more specific details.

If the product name is text in a formfield - and thus is user input, then duplicating that (as many timesas you want) is very easy. Simply make a field with the name of that formfield, and set that formfielf as Calculate on exit. Voila. Change the text of that one formfield, and all the others that reference it change as well.

EXAMPLE:

A text formfield named "ProductName". It is set as Calculate on exit (under Properties).

As many times as you like:

1. go to where you want the result duplicated
2. press Ctl-F9
3. type "ProductName" - no quotes
4. move the cursor out of the field.

Done. Any text entered into the text formfield ProductName will be duplicated in all the other fields that use "ProductName".
