I'm working with an existing document and want to change some of the document settings. Specifically, the Outline Level of a paragraph (by clicking Format, then Paragraph. Most of the paragraphs are updatable, but some have the Outline Level grayed out indicating that I can't change it.

Any ideas?

That's interesting. I checked the document I am working on and the headings that are included in the TOC can't be changed using your method. However, a heading that has been excluded from the TOC (ie, the "copy cat" headings that I don't want the TOC to pick up and duplicate) can be changed.

Will keep an eye out for an explanation.

I do believe that the inbuilt styles are predefined and not able to be changed. Manually formatted paragraphs can be given a level as can user created styles.
