Has anyone used the latest revision of this utility before?

I need to get a spreadsheet of our IP/Hostnames in our environment without disrupting the current DHCP servive.

I've used it many times. Are you looking to just export leases, etc for use in a spreadsheet or planning on migrating dhcp? The tool is not really geared toward doing that.

Yes. I just want to export the various subnets into txt or csv file. I need it for documentation.

Either that or do it manually.

Do you know of an easier way of just extracting the data?

I guess the simplest way IMO is just to export (right click >> export). May not be the funnest method if you have a large amount of scopes though.
