Is there a way in MS SQL 7 to trace/see all the updates/deletes statement done on all the tables at a particular date and time?

You can turn on the profiler and limit it to just updates and deletes, but only for future activity.

If you still have your TLogs during that date, you could try and use a 3rd party log reader tool like Lumigent Log Explorer.
