ms exchange - recovery of common diaries etc

I have a client who has had the server stolen. The server holds the exchange data for common diaries, contacts and many specially designed forms.

Does anyone know where these files are held so that I can restore them one exchange has been re-installed. I have backed the whole server up using Veritas Backup Exec V8

Any help will be greatly appreciated.
