Movins mailboxes across organisations

In theory you cannot do this. There are some third party tools that allow you to export mailboxes across orgs as I recall.
If you only have a few, create a PST file for each person.
If you have lots you can try stopping the services, copying the 3 edb files to the new server, run isinteg -patch and then start the services on the new server.
