moving from server 2003 to 2008

Hi I have a server 2003 domain its Domain function level is Windows 2000 mixed its Forest Functional level is Windows 2000. I want to move all the computers here to a new server 2008 domain. Do I have to raise the level on my server 2003 first and if so to what level do I have to raise it to?
Also if I raise my server 2003 level I have a few 2000 boxes on the network will those no longer be able to get on the server 2003 network?
