Moving Forefront from old server to new

Hello all,

My client wants me to move the single server Forefront(FF) server to a new server.
Some facts:

I want to keep all the current settings in FF.

1) single Domain
2) 11 sites (some slow, some ok, some good)
3) All firmware and Patches are up todate
3) about 300 pc's

Here is my take on what I should do:

1)Install all the software onto new server.
2)Undeploy the current policy from OU.
3)Deploy too same OU from new server.
4)Remove old FF server from Domain.

I do not want to leave them "exposed" for to long.

I did read on un-installing the client manually and so on,,,I just think that might be too messy.
