Moving Farm to New Server

Could I ask a few questions about setup and licensing? I used to know a bit about Metaframe ( certified in the late 90's ) however have not touched it much in the past few years. So I had a local company come in to set up a replacement MF server for us. $1200 later the new server is still not up ( not all their fault but... ). Worked with Citrix a little but of course no tech support. The timeframe for swapping over ended before I had completed the swap, so MF was removed from the new server and I'm back to square one.

We have two offices. The MF server here has been up for 6-7 years. The remote MF server only a year or so. They pool their licenses, but there is no load balancing. As part of this attempt the local MF here was updated to PS 4, and the MF Access Suite Licensing application is on the local, old MF server here.

I would like to move the farm to the new machine. Or create a new farm on the new server and move the remote MF server to that. And I need to leave time for problems, which always seem to occur at least to those of us who don't often work with Installing MF.

The biggest issue seems to be the licensing server for MF. The new MF server is Server 2003 and has its own TS 2003 licenses separate from the old W2K Server TS licenses. Can I install PS4 to the new machine, install the Citrix licensing server and get a new farm going THEN take down the old server/farm? If so, how many hours or days to I have to accomplish this?
