If you build the box exactly the same as your existing box, then doing an NT Exchange backup and restoring the database is not too difficult. You just have to make sure the paths and server name are all the same. Then just backup the database to some central location and restore it.
Or you can use Exmerge to do all mailboxes at once. This is easier process but requires more space and overhead.
