Moving Domains to New ISP

Hi I am in the process of aranging for two domains currently hosted by ISP "A" to be moved to ISP "B" we are currently using POP3 mailboxes so I am going to have to replicate the POP boxes with ISP "B", I wondered if anyone could clarify exactly what the procedure is when transfering .co.uk domains.

I have been told that the "IPS tags" need to change and that the "Zone files" should not be deleted until the transfer has taken place - what are IPS tags and zone files, can anyone explain or direct me to a good web page.

here's what u need to do.. in order not to lose any mail, setup a backup MX record for your domain with ISP A, with a friend perhaps or something.. let that propagate based on your domain expiry period... u can then setup your records with ISP B.. once that's ready, move your domain records over to ISP B's network.. give up 48 hours to fully propagate.. now, during the propagation, all your undeliverabe mail will be buffered at your friend's server, until your records become known, and then all pending messages will be delivered to your new network..

I have a good relationship with the relevant people at both ISP's and they have assured me that they will do everything that can be done to minimise any disruption, and that the transition should go pretty seamlessly.

I wan't to understand the technology involved - I understand DNS and name servers, but my knowledge starts to break down a bit with MX records and IPS tags and "zone files", can anyone clarify how this works or direct me to a relevant website ?
