We have a administrative professional that has left our organization and she was responsible for sending out hundreds of appointments for the year to department heads. We want to be able to move those appointments (and the ownership) to a her replacement's email account and keep them in tact and not have the system resend the item once moved.

any ideas?

give her replacment ownership of the mail box. Basicly, archive everything the new user has already done, then delete the new user. Go into the system and rename the old user to the new user, she will then have ownership of everything ... and this include mail. So if she does not want the mail, then archive it out of the mailbox and store in a safe place if needed. Then use a FID editor to change the new user's FID info on her archive to the FID of the old user, open the arichive and move the mail back into the mail box.
