Move EX2000 mailboxes to EX2007 in new forest

We are in the process of redoing our entire network and in this we are creating a new forest with a new domain and placing an Exchange 2007 box in this new forest that is running Server 2008. In our current forest the domain servers are Server 2000 and Exchange is also 2000. How can I move our current Exchange 2000 mailboxes to the new forest that will have Exchange 2007. We have approx 75 mailboxes and I would like to recreate the user accounts from scratch if possible. So I guess what I am asking is how can I create new users in the new forest and move our existing mailboxes from our Exchange 2000 forest to the Exchange 2007 forest? Thank you.

You could either create a trust and most them, or export them to .pst and import them on the new server. If the mailboxes aren't huge, export/import would be my choice.

I created a trust between the two domains but I can't figure out how to move them. Once the trust is established how do you go about moving the boxes. I have about 75 mailboxes and would rather move then import/export as I have a handfull of mailboxes that are pretty big.

One more thing. I have been reading that there needs to be at least one Server 2003 box in the domain with the Exchange 2000 server. I currently do not have any Server 2003 boxes in the Exchange 2000 environment but I can install one to get the move going since we are doing away with the domain with the 2000 boxes. If I install a 2003 domain controller in my current 2000 environment will this cause any issues as it may be a few days before I can move all the mailboxes. Thank you.
