One of those bizarre things. I upgraded to 7.1.2 and in the mappings designer, when I double click on one of a list of mappings, which brings up the Edit dialogue box, then click on the ports tab, the text is WHITE on WHITE background.
In the process of posting this I've solved the problem. Here is what it affected for me.

The rest of the mappings were fine. The CAUSE of this problem is an Appearance setting in Windows XP. I had mine set to Silver, rather than the default BLUE.
In the Display settings in the control panel, on the Appearance Tab, if the Windows and Buttons drop down box is set to Windows XP Family AND the Color Scheme is on Silver this is the problem, change it back to Blue (Default) and the test re-appears.
HOWEVER, there is still something different because the text that was missing before is a lighter shade of blue now, but it is visible. These mappings were created with PowerCenter 6.x and we have just migrated to 7.1.2 in the last two weeks.
I wanted to post this in case there would be someone else that might run into this in the future, they might find the solution on Tek-Tips.
Hope this helps,
