Im looking for ways to mirror hard drives so that i have my primary hard drive and an exact copy... if i save something to the primary it is saved to the second one... is this possible and if not is there a way at least to copy all the info, OS and all to another HD...

Raid is what you need to make an on-the-fly copy.

RAID1 using either scsi controller card (adaptec etc)or IDE using windows (I have only done this in server so don't know if desktop is supported)
