minimum back up

Can anyone advise as to what files I should be backing up on my PDC and exchange server as a minimum requirement.
At present I am backing up everything on both, all drives and all files. I have just selected everything.
This was fine but now my backup is taking around 9 hours and soon it will be the case of not finishing before people come into work again.
What do you think are the essential files that I should be backing up every day and which ones can I leave out. I don't want to start leaving out files that could prove problematic if I have problem with exchange or my PDC/

Any advice would be greatly appreciated
