Hope someone can help me.

When I build one of our servers some time ago, I by mistake didn't define the disk as a RAID-1 but installed Windows 2003 on the first drive as C: and ignoring the second disk.

My problem is that it should have been RAID-1.

Is there anyway to convert the single disk setup I have to RAID-1 without the destruction of my current setup on the first drive?

No, but you can Ghost the drive first. After setting up the RAID, restore the Ghosted image.
