Microsoft updated my Windows 10 Pro to Windows Education

When Microsoft pushed their November updates, they changed three of our computers from Windows 10 Pro to Windows Education. This did several things, 1) It broke functionality of several programs, 2) users’ profiles no longer sync, and 3) those computers no longer have valid licenses as our licenses are for W10Pro.

How can I get my Win 10 Pro back?

I've looked at

but we don't have a Windows Store for Education account.

Call Microsoft Activation. Microsoft is getting very sloppy with their updates.

I did. They recommend downloading the newest iso and reformat and reinstall.
