Micros 3700 - Segregation of modification items in database

We utilize Micros 3700 and are currently integrating with a 3rd part Inventory/Labor management platform. We are also on Micros EM - and we're looking to try and adjust our existing database to accommodate information that gets passed to our 3rd party application.

We'd really like to be segregating modifiers on our sandwich items for distinct tracking as three unique groupings:
1. Substitution modifiers on a sandwich build recipe with no sale value - this must exclude any count or tally of standard recipe condiments included in the sandwich, and only track the changes. Substitute breads, substitute cheeses, substitute meats and extra or substitute veggies.
2. Add on modifiers with a sale value. (i.e. Extra meat, extra cheese, add bacon, add pepperoni)
3. MYO Modifiers both with and without sales. This would include Subs and Adds, with separate and distinct PLUs for Add on or Extra meat/cheese additions for which there is a charge.

Our Micros dealer is telling us that we cannot do this in conversational ordering - but I'm curious is there is in fact a workaround?

A Tracking Total should be able to fire on a particular PLU or Major/Family Group, regardless of whether Conversational Ordering is active or not. This should at least get you #2.

That said, I'm only shin-deep into the Conversational Ordering waters at present, so there might be some other caveats - especially with distinguishing the no/add/sub modifers.
