Micros 3700 Beverage Control

Our OPS people want to make sure that the staff is ringing in all of the soft drinks. This seems like the beverage control feature would be just annoying enough to make them do so, but there area a couple of issues.
For instance, if two people sit down and split a bottle of wine it will keep prompting "1 drink for 2 guests". I dug around the menu item classes, hoping that there would be a beverage control override of some sort but couldn't find anything.
Also, the setup help is a bit vague, but mentions the need for a bunch of service charges, tenders, and touchscreen buttons. Anybody know what that's all about? My guess is that its just Micros brain-dumping all of the options and making them look like they're mandatory, but I want to make sure.

For customers that were very adamant about the beverage control, we created a new menu item class and linked the beverage to the number of glasses. The wine itself was not linked as a bev. The condiment for the glass had a min of 1 and max of 99 and every time they hit glass, it counted as 1 bev. This also works with pitchers of beer/soda.
